Recipe: Pasta de Broccoli (Creme Sauce)

Summary: This is the ultimate “go-to” dish whenever you need something to whip up as an easy main dish or a filling side dish. You can use any pasta you’d like – we prefer the twisty kind, ourselves.

Ingredients

  • 3/4 cup fusilli pasta
  • 1 cup Wild Veggie Broccoli
  • 1 tsp. grated parmesan cheese
  • Salt and pepper, to taste
  • 1 egg yolk
  • 1 tbsp. milk
  • 1 tbsp. heavy cream

Instructions

  1. Cook pasta in boiling water following package instructions until al dente, and drain.
  2. Heat Wild Veggie Broccoli in a deep pan over medium heat, then simmer, stirring continuously until reduced by one-third and thickened.
  3. In a separate saucepan, heat the egg yolk, milk and cream until thickened.
  4. Stir the egg mixture into the broccoli reduction and mix well.
  5. Pour sauce over pasta and mix together.
  6. Transfer pasta to a dish and sprinkle with parmesan cheese. Season with salt and pepper, if desired.
